  • 85 grams jelly crystals
  • 125 ml cream
  • 12 pieces sponge fingers
  • 1/2 cup fruit juice (apple or grape)
  • 1 1/2 cups custard
  • 400 grams mixed berries
  • 200 ml thickened cream
  • 1 teaspoon custard powder
  • Fresh mint leaves for garnish

Instructions

  1. Prepare jelly according to package instructions; refrigerate until slightly set.
  2. Combine half-set jelly with cream; beat until fluffy and pour over jelly in dessert glasses.
  3. Soak sponge fingers in fruit juice and layer on top of the jelly mixture.
  4. Add custard over the soaked sponge fingers and top with chopped berries.
  5. Whip thickened cream with custard powder until stiff peaks form; pipe onto trifles.
  6. Garnish with whole berries and mint leaves before serving.
