  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 12-cup muffin tins with non-stick spray.
  2. In a large bowl, mix flour and brown sugar. Cut in cold butter until crumbly.
  3. Press dough into each muffin cup evenly across the bottom and up the sides.
  4. In another bowl, whisk eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until smooth. Fold in chopped pecans.
  5. Pour filling into each crust until almost full.
  6. Bake for about 40 minutes or until tops are golden brown and set.
  7. Cool in tins for 10 minutes before transferring to wire racks.
