  • 4 bone-in chicken legs
  • 4 bone-in chicken thighs
  • 1 small onion
  • 4 Roma tomatoes
  • 4 garlic cloves
  • 3 dried guajillo chiles
  • 1 dried ancho chile
  • 2.5 cups chicken broth
  • 2 tablespoons apple cider vinegar
  • Salt and ground black pepper (to taste)
  • 2 tablespoons olive oil (divided)
  • 2 teaspoons sea salt or Kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried coriander
  • 0.25 teaspoon ground cloves
  • 2 bay leaves
  • Chopped cilantro (for garnish)

Instructions

  1. Season chicken with salt and pepper. Set aside.
  2. In a pot, sauté sliced onions and quartered tomatoes in olive oil until onions are translucent.
  3. Add chopped garlic and cook until fragrant.
  4. Stir in dried chiles and chicken broth; bring to boil then simmer for 10 minutes.
  5. Blend the mixture until smooth; set aside.
  6. Brown chicken pieces in the same pot with more oil until golden on all sides.
  7. Return blended sauce and bay leaves to the pot; bring back to boil.
  8. Cover partially and simmer for about 45 minutes until chicken reaches an internal temperature of 165°F.
  9. Garnish with chopped cilantro before serving.
