1 pound sirloin steak
3 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
2 cups cooked brown rice, quinoa, or cauliflower rice
1 cup roasted chickpeas
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup kalamata olives, pitted
⅓ cup crumbled feta cheese
¼ cup fresh parsley or dill, chopped
1 cup plain Greek yogurt or coconut yogurt
½ cucumber, grated and excess water squeezed out
1 tablespoon fresh dill, chopped
Salt and pepper, to taste
3 tablespoons olive oil for vinaigrette
2 tablespoons fresh lemon juice for vinaigrette
1 teaspoon honey for vinaigrette
1 small clove garlic for vinaigrette
½ teaspoon dried oregano for vinaigrette
Instructions
Start by whisking together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add your sirloin steak to the mixture and let it marinate in the refrigerator for at least 30 minutes.
Once marinated, heat up your grill or skillet over medium-high heat. Cooking the steak for about 4–5 minutes per side will yield a lovely medium-rare finish. Let it rest afterward.
While your steak is resting, prepare the tzatziki by combining Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl.
In another small jar or bowl, whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper until smooth for the vinaigrette.
Assemble your bowls by dividing your base of brown rice (or quinoa/cauliflower rice) between serving bowls and top with slices of steak, cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), herbs, tzatziki sauce, and drizzle of vinaigrette.
