Ingredients

  • Boneless, skinless chicken breasts
  • Medium-sized zucchini
  • Olive oil
  • Fresh garlic
  • Lemon juice
  • Oregano
  • Basil
  • Thyme
  • Parmesan or feta cheese
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, and half of the oregano, basil, and thyme. Optionally pound to an even thickness.
  3. Slice zucchini into rounds or half-moons. Toss in a bowl with olive oil, minced garlic, lemon juice, zest, remaining herbs, salt, and pepper.
  4. Arrange seasoned chicken in the baking dish and layer zucchini around it.
  5. Bake for 25-30 minutes until chicken is cooked through (internal temperature of 165°F/75°C). Add cheese during the last five minutes if desired.
  6. Allow to rest for 5-10 minutes before slicing and serve warm.
