  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté the diced onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. In a large bowl, combine the sautéed onion and garlic with baby spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well mixed.
  3. Shape the mixture into approximately eight patties about ½ inch thick.
  4. Heat remaining olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and fully cooked.
  5. Drain on paper towels and serve warm with garnishes or sauces of your choice.
