  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (like basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz, drained)
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Season chicken with salt, pepper, oregano, paprika, and cumin; brown in the pan and set aside.
  2. In the same skillet, add more oil if needed. Sauté onion and garlic until fragrant. Add bell pepper and cook until slightly tender.
  3. Stir in rice for about a minute to toast it slightly.
  4. Mix in diced tomatoes and chicken broth; return chicken to skillet. Bring to a simmer; cover and reduce heat to low.
  5. Cook for 20-25 minutes until rice is tender and liquid is absorbed.
  6. Stir in olives and feta; let sit briefly before serving.
  7. Garnish with fresh herbs before enjoying.
