  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and cook for another minute.
  2. Stir in chopped tomatoes, ground cumin, paprika powder, salt, and black pepper. Cook until tomatoes are softened.
  3. Add canned white beans and dry white beans to the pot, followed by one cup of veggie broth. If using an Instant Pot, seal it now.
  4. For stovetop cooking, bring the mixture to a gentle simmer. Cook until all beans are tender (approximately 25 minutes), stirring occasionally.
  5. Serve warm with your choice of sides like crusty bread or rice.
