  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  3. In a skillet over medium-high heat, cook ground beef until browned. Drain excess fat, add taco seasoning and water; simmer for 2-3 minutes.
  4. Warm black beans and corn in a separate pot until heated through.
  5. Assemble bowls: layer roasted potatoes, seasoned beef, black beans, corn, and top with cheese and other desired toppings.
