  • 4 large eggs (separated)
  • 1 cup granulated sugar (divided)
  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 teaspoon vanilla extract (or zest of one lemon)
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare an 8-inch springform pan with parchment paper at the bottom.
  2. Separate the egg whites and yolks. In a clean bowl, beat egg whites until frothy, gradually adding 1/3 cup of sugar until stiff peaks form.
  3. In another bowl, whisk egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold in one-third of the whipped egg whites into the yolk mixture to loosen it up, then carefully incorporate the remaining egg whites.
  5. Pour batter into the prepared pan and place in a larger tray filled with hot water (bain-marie). Bake for 50–60 minutes until golden brown.
  6. Allow the cake to cool slightly in the oven before removing.
