  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 400°F (200°C). In a medium saucepan, combine water and butter over medium heat until melted. Add flour and salt, stirring vigorously until a dough forms.
  2. Remove from heat and let cool slightly before adding eggs one at a time, mixing well after each addition. Pipe the dough onto parchment-lined baking sheets and bake for about 25–30 minutes until golden brown.
  3. To make the cream filling, whisk together heavy cream, lemon juice, lemon zest, sugar, cornstarch, milk, egg yolks, and vanilla in a saucepan over medium heat until thickened. Allow to cool before piping into cooled eclair shells.
  4. Assemble by poking holes in each shell and filling generously with cream. Top with fresh raspberries mixed with powdered sugar.
