  • Gnocchi (optional)
  • Olive or avocado oil
  • Ground spicy Italian sausage (or turkey sausage)
  • Leeks
  • Fennel
  • Parsnip
  • Carrot
  • Celery
  • Garlic
  • Canned tomatoes
  • Canned navy beans
  • Chicken stock/broth
  • Kale
  • Fresh parsley

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large pot over medium-high heat, drizzle olive oil and brown the crumbled sausage until cooked through.
  3. Add sliced leeks, fennel, parsnip, carrot, celery, salt, pepper, and Italian seasoning. Sauté until vegetables are tender.
  4. Stir in garlic and cook until fragrant. Add chopped tomatoes and navy beans along with the chicken stock/broth; stir well.
  5. Cover and simmer for 20 minutes until all vegetables are tender. Stir in kale and parsley along with a squeeze of lemon juice.
