  • 1/2 lb ground beef
  • 1/2 lb ground beef (85/15 meat to fat ratio)
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves (minced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese (optional)

Instructions

  1. In a large bowl, mix ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic, parsley, basil, red pepper flakes, salt, and black pepper until well combined. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat and brown the meatballs in batches; set aside.
  3. In the same pot, sauté diced onion and carrots until tender. Add minced garlic and cook for an additional minute.
  4. Stir in diced tomatoes, water, beef stock, tomato paste, and seasonings; bring to a gentle simmer.
  5. Return the meatballs to the pot and cook for 10 minutes before adding gnocchi. Simmer until gnocchi float.
  6. Serve warm with optional garnishes like fresh parmesan cheese.
