  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together all of the dry rub ingredients. Coat the chicken with these spices and set aside.
  3. In a large oven-safe sauté pan, sear your seasoned chicken until browned on both sides.
  4. Drain most of the fat but leave a little for flavor. Add your chopped cabbage into the pan and sauté for about 2–3 minutes until it begins to wilt.
  5. Add sliced potatoes, onions, and chicken stock into the pan. Stir everything well so that each ingredient gets coated.
  6. Chop up your crispy bacon (if using) and mix it back into the vegetable medley.
  7. Arrange your seared chicken on top of the vegetable mixture. Slide your pan into the preheated oven and bake for about 45–50 minutes or until your chicken reaches an internal temperature of 165°F (75°C).
