  • 1/2 cup honey
  • 1/2 cup butter, softened
  • 1/2 cup sugar

  • 1 cup diced peaches (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together honey, butter, and sugar until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Gradually add dry ingredients alternating with milk until just combined.
  6. Fold in diced peaches gently.
  7. Fill cupcake liners two-thirds full and bake for 18-22 minutes until golden.
  8. Allow to cool completely before frosting.
  9. For the frosting, beat together softened cream cheese and butter until smooth. Add honey and vanilla extract next; then gradually mix in powdered sugar until fluffy.
  10. Frost each cupcake and if desired, add peach puree to frosting for extra flavor.
