  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat skillet over medium heat; sear chicken for 3–4 minutes per side until golden brown.
  3. In a bowl, mix BBQ sauce, honey, soy sauce (or alternative), and minced garlic.
  4. Toast uncooked rice in the skillet for 1–2 minutes while stirring.
  5. Add chicken broth and half of the BBQ sauce mixture; stir to combine.
  6. Return chicken to skillet; pour remaining sauce over it.
  7. Cover and simmer on low for about 15 minutes.
  8. If using vegetables, add them now; cover and cook for an additional 5 minutes.
  9. Let sit covered for 5 minutes before serving.
