  • 4 bell peppers
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • Fresh herbs (basil, parsley)
  • 1 Tbsp olive oil
  • ½ cup breadcrumbs
  • 1 Tbsp oil

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds, and place cut side up on a baking sheet. Brush with olive oil and bake for about 20 minutes until slightly softened.
  2. While the peppers bake, microwave the spinach until wilted (15–30 seconds), then chop finely. In a bowl, mix the spinach with ricotta, mozzarella, parmesan, eggs, and herbs until well combined.
  3. Fill each pepper half generously with the ricotta mixture.
  4. For the topping, mix breadcrumbs with oil and sprinkle over the stuffed peppers.
  5. Reduce oven temperature to 350°F (176°C) and bake for another 30 minutes until golden brown.
