  • 1 yellow onion (diced)
  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed)
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • Sea salt and black pepper to taste

Instructions

  1. In a heavy-bottom Dutch oven over medium-low heat, sauté diced onion and sliced carrots until the onion is translucent.
  2. Add minced garlic and cook for a few seconds before stirring in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar. Let simmer until nearly evaporated.
  3. Whisk together whole wheat pastry flour with vegetable stock until smooth; add to the pot and bring to a gentle simmer.
  4. Stir in smoked paprika and whole cloves; let cook for about 45 minutes until jackfruit is fork-tender.
  5. Add gnocchi, diced tomatoes, and thawed green peas; cook until the gnocchi float to the top.
  6. Remove thyme sprigs and cloves; season with salt and pepper. Stir in chopped parsley before serving.
