  • 1 red bell pepper (diced)
  • 1 medium tomato (diced)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 cup long grain white rice (uncooked)
  • 2 cups vegetable broth or water
  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 2 cups fresh spinach (or kale, roughly chopped)
  • Juice of 1 tablespoon lemon
  • Fresh parsley or mint for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté the chopped onion until translucent, then add minced garlic and diced red bell pepper. Cook until softened.
  2. Stir in diced tomatoes, ground cumin, smoked paprika, and oregano. Cook until fragrant.
  3. Add uncooked rice and stir to coat with the flavors. Pour in vegetable broth or water, bring to a boil, then reduce heat to low. Cover tightly and cook until rice is tender.
  4. Fold in drained chickpeas and fresh spinach. Cook for an additional few minutes until greens are wilted.
  5. Remove from heat and mix in lemon juice, season with salt and pepper. Serve garnished with parsley or mint.
