  • 2/3 cup maple syrup or honey
  • 1/4 cup plain Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix the whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined; small lumps are okay.
  5. Line a muffin tin with paper liners or grease it lightly. Fill each muffin cup about three-quarters full.
  6. Bake for 15-18 minutes or until a toothpick comes out clean.
  7. Allow cooling for five minutes before transferring to a wire rack.
