  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup soy sauce (or coconut aminos)
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked jasmine rice
  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup chopped green onions
  • 1/4 cup toasted coconut flakes
  • 1 tablespoon sesame seeds

Instructions

  1. Cook jasmine rice according to package instructions; set aside.
  2. Season chicken breasts with garlic powder, onion powder, paprika, black pepper, and salt.
  3. Heat olive oil in a skillet over medium heat; cook chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. In a separate bowl, whisk together soy sauce (or coconut aminos), pineapple juice, honey, rice vinegar, and grated ginger.
  5. Remove chicken from skillet; pour sauce into the same skillet and simmer for 3-4 minutes.
  6. Slice chicken and serve over rice topped with fresh pineapple, bell peppers, cucumbers, and drizzle with sauce.
