  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for about 8-10 minutes, stirring occasionally until golden brown.
  3. Remove potatoes from the skillet. In the same skillet, sauté chopped onion and minced garlic for about 3-4 minutes until translucent.
  4. Add ground turkey to the skillet, breaking it apart as it cooks for about 6-8 minutes until no longer pink.
  5. Season turkey with thyme, paprika, salt, and black pepper, stirring well.
  6. Return cooked potatoes to the skillet and pour in chicken broth; stir to combine.
  7. Cover and simmer on low heat for about 5 minutes to meld flavors.
  8. Stir in chopped parsley before serving warm.
