  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced tomatoes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 40-50 minutes until tender.
  2. Heat olive oil in a skillet over medium heat. Sauté onion for about 3-4 minutes until softened.
  3. Add garlic and bell pepper; cook for an additional 2-3 minutes.
