  • 3 bell peppers (halved)

  • 1 pound ground chicken breast
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • 1 zucchini (diced)
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • 2 tablespoons fresh dill (chopped)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 350°F.
  2. Cook the rice according to package instructions.
  3. Prepare the bell peppers by slicing them in half and removing seeds; place cut side up in a baking dish.
  4. In a skillet over medium heat, warm olive oil and cook ground chicken with salt and pepper until no longer pink.
  5. Stir in Italian seasoning, red onion, garlic, and zucchini; cook for an additional two minutes.
  6. In a bowl, mix cooked rice with chicken mixture, cherry tomatoes, kalamata olives, half the feta cheese, and dill.
  7. Stuff each pepper with the mixture; sprinkle remaining feta on top and add water to the baking dish.
  8. Cover with foil and bake for about 40-45 minutes until tender; serve warm with lemon wedges.
