  • Juice and zest of 2 lemons

  • 2 pounds chicken (breasts, thighs, drumsticks, or chunks)
  • 1 teaspoon Dijon mustard (optional, for emulsification)
  • 1 tablespoon fresh parsley or dill (chopped, optional for garnish)

Instructions

  1. Zest one lemon into a medium bowl and juice both lemons until you have about 1/4 cup of juice. Mince the garlic.
  2. In the same bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and optional Dijon mustard until well combined.
  3. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure each piece is well-coated.
  4. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 24 hours for maximum flavor).
  5. Remove from the fridge about 20 minutes before cooking to bring to room temperature.
  6. Cook using your preferred method: grill over medium-high heat for about 10-15 minutes per side; bake at 400°F for around 20-25 minutes; or pan-sear until golden brown and cooked through.
