  • 2 pounds russet potatoes (peeled and cubed)
  • 4 tablespoons butter (for potatoes)
  • 1/2 cup milk
  • 1 pound carrots (peeled and sliced)
  • 2 tablespoons honey
  • 1 tablespoon butter (for carrots)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Combine olive oil, minced garlic, Italian herbs, salt, and pepper in a bowl. Rub over chicken breasts.
  2. Sear chicken in a skillet over medium-high heat for about 4 minutes on each side until golden brown. Transfer to a baking dish and bake for 20 minutes or until internal temperature reaches 165°F.
  3. While chicken bakes, boil cubed potatoes in salted water for 15-20 minutes until fork-tender. Drain, add butter and milk, then mash until smooth.
  4. In a saucepan, melt butter over medium heat. Add carrots; cook for about 5 minutes. Stir in honey, salt, and pepper; cook until tender.
  5. Let chicken rest for 5 minutes before slicing and serve with mashed potatoes and glazed carrots.
