  • 1.2kg / 2.6lb Sweet Potatoes
  • 6 tbsp / 90g Unsalted Butter, melted
  • 3 large cloves of Garlic, finely grated
  • 1 tbsp very finely diced Fresh Rosemary
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g / 1.5oz Parmesan

Instructions

  1. Preheat the oven to 180C/350F.
  2. Peel and slice sweet potatoes into thin rounds (about 3mm/1/8').
  3. Brush muffin tray cups with melted butter.
  4. In a bowl, combine melted butter, garlic, rosemary, salt, and pepper; toss sweet potato slices until coated.
  5. Stack potato slices in muffin cups and top with Parmesan cheese.
  6. Cover with foil and bake for 35 minutes; then uncover and bake at 200C/400F for an additional 15 minutes until charred.
