  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by dividing the Pâte Sucrée dough into 12 portions and pressing them into tartlet pans.
  2. Freeze the shells for 15-30 minutes, then bake at 375°F for 10-15 minutes until golden brown. Let cool.
  3. For the strawberry jam, cook chopped strawberries with sugar until thickened; cool completely.
  4. Prepare the pastry cream by heating sweetened condensed milk, whole milk, and heavy cream; temper egg yolks mixed with cornstarch; stir until thickened and chill.
  5. Assemble by layering strawberry jam in each tartlet shell, piping in pastry cream, and topping with halved strawberries.
