  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Flour + 3 tbsp Water
  • Fresh Parsley (chopped)

Instructions

  1. Slice onions thinly and caramelize in olive oil over medium heat for 30–40 minutes, adding beef broth if needed.
  2. Prepare the béchamel sauce by whisking flour into melted butter, then slowly adding heavy cream until smooth.
  3. Combine two-thirds of the caramelized onions into the sauce, season with salt, pepper, and Parmesan.
  4. Cook cavatappi until just below al dente, then mix with the creamy sauce.
  5. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden.
