  • 2½ tablespoons salted butter

  • 24 ounces gnocchi (store-bought)
  • 2 pounds yellow onion (halved and thinly sliced)
  • 1½ tablespoons thyme (finely chopped)
  • 6 cloves garlic (minced)
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock (low sodium)
  • 1½ cups gruyere cheese (freshly grated)
  • ½ cup parmesan cheese (freshly grated)

Instructions

  1. Heat olive oil and butter in a skillet over medium heat. Add sliced onions and cook slowly for 45-60 minutes until caramelized.
  2. Once caramelized, stir in thyme and garlic; cook for another 2 minutes until fragrant.
  3. Deglaze the pan with grape juice and reduce by half for about 3-4 minutes.
  4. Add flour, stirring until thickened (1-2 minutes). Mix in dijon mustard and Worcestershire sauce.
  5. Pour in beef stock along with a bay leaf; bring to a boil then simmer for 6-7 minutes. Season with salt and pepper.
  6. Cook gnocchi in salted water until they float, then drain and mix into the sauce.
  7. Top with grated cheeses and broil for 3-5 minutes until bubbly and golden brown.
  8. Serve garnished with fresh thyme alongside crusty bread or salad.
