  • 3 large yellow onions
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette
  • 1.5 cups shredded Gruyère or Swiss cheese

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef short ribs until browned on all sides; set aside.
  2. In the same pot, melt butter over medium heat and add sliced onions. Cook until caramelized (20-30 minutes), stirring occasionally.
  3. Add minced garlic, cooking for another minute before returning the short ribs to the pot with broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Simmer for 2–3 hours.
  4. Preheat oven to 350°F (175°C). Toast baguette slices until golden brown.
