  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • Salt (to taste)
  • 4 shallots (diced)
  • 1 rib celery (diced)
  • 45 thyme sprigs
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 125ml coconut cream

Instructions

  1. Preheat the oven to 180C/350F.
  2. Pat dry the chicken thighs and legs; season with salt.
  3. Heat olive oil in a large casserole dish over medium-high heat; brown the chicken on all sides.
  4. Remove chicken and cook diced shallots and celery in the same pan until softened.
  5. Add minced garlic and cook briefly before deglazing with apple juice.
  6. Stir in flour, then gradually add chicken stock followed by coconut cream until smooth.
  7. Return chicken to the dish with thyme and bring to a gentle boil before transferring to the oven.
  8. Bake covered for 30 minutes, then uncover and bake for an additional 30 minutes.
  9. Sauté apple wedges until golden brown; fold into casserole before serving.
