  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare the Corn: If using fresh corn, cut the kernels off the cob. For canned corn, drain and rinse. Thaw and drain frozen corn. Roast fresh corn in a skillet for added flavor if desired.
  2. Mix the Base: In a large bowl, combine sour cream, mayonnaise, and softened cream cheese. Blend until smooth.
  3. Add Cheese and Spices: Stir in cheddar and pepper jack cheeses along with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper until well mixed.
