  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon flaky sea salt

Instructions

  1. Activate the yeast by dissolving it with honey in warm water; let sit for about 5 minutes until foamy.
  2. Mix in flour, salt, and olive oil to form a sticky dough. Cover and let rise in a warm spot for 45–60 minutes until doubled in size.
  3. Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Spoon the dough into the muffin cups, filling each about ¾ full.
  5. Drizzle olive oil on top and sprinkle with rosemary, minced garlic, and flaky salt.
  6. Bake for 18–20 minutes until golden brown; rotate halfway through.
  7. Allow to cool slightly before serving warm or at room temperature.
