  • 1 small butternut squash (700-900g, peeled and chopped)
  • 2 sweet potatoes (275g, peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk (reserve 2 tablespoons for garnish)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1 teaspoon chili flakes
  • 750 ml vegetable stock or water
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the sliced onion until soft and translucent (about 5 minutes).
  2. Add garlic, ground cumin, cinnamon, chili powder, and chili flakes; stir until fragrant (about 1 minute).
  3. Add chopped butternut squash and sweet potatoes. Pour in vegetable stock; season with salt and pepper. Simmer for about 15 minutes until vegetables are tender.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Stir in coconut milk until heated through; adjust seasoning if necessary before serving hot.
