  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • pinch of salt
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a mixing bowl, whisk together flour, cornstarch, sugar, and salt.
  2. Add vegetable oil and water; whisk until smooth. Let rest for 30 minutes.
  3. Heat a nonstick pan over medium-low heat. Pipe long strands of batter onto the surface and cook until set.
  4. Cool cooked kataifi on a kitchen towel to prevent drying out.
  5. Melt white chocolate with double cream in intervals until smooth.
  6. Blend pistachios with salt until smooth; mix into the melted white chocolate.
  7. Toast half of the kataifi in melted butter until golden.
  8. Combine toasted kataifi with the pistachio mixture; chill until firm.
  9. Roll chilled mixture into balls and coat with melted milk chocolate.
  10. Refrigerate until set before serving.
