  • 1 cup dill pickle juice
  • 0.5 cup chopped dill pickles
  • 0.5 cup finely grated Parmesan cheese
  • 0.75 cup panko breadcrumbs

  • 1 tsp dried dill or 1 tbsp fresh dill
  • 2 eggs, beaten
  • 0.5 cup all-purpose flour

Instructions

  1. Marinate chicken in dill pickle juice for at least 30 minutes (up to 2 hours).
  2. Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, parmesan cheese, garlic powder, and dill.
  3. Pat the marinated chicken dry; dredge each breast in flour, dip in egg, then coat with the breadcrumb mixture.
  4. Place on a wire rack over a baking sheet; bake at 400°F for 20-25 minutes until cooked through (internal temperature reaches 165°F).
  5. While baking, mix mayonnaise, sour cream, chopped pickles, and lemon juice for the creamy sauce.
