  • 67 medium Yukon gold potatoes, thinly sliced
  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 2-quart baking dish and layer the sliced potatoes and onions.
  3. In a saucepan, melt butter over medium heat; whisk in flour gradually, then slowly add almond milk for a smooth sauce.
  4. Stir in shredded cheddar cheese, garlic powder, salt, and pepper until combined.
  5. Pour the sauce evenly over the layered potatoes.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, sprinkle gruyere and parmesan cheeses on top, then bake uncovered for another 30-45 minutes until bubbly and golden brown.
  8. Garnish with fresh parsley before serving.
