  • 8 oz cherry tomatoes
  • 4 garlic cloves
  • ¼ cup sun-dried tomatoes
  • 1 tablespoon tomato paste
  • 1 (15 oz) can cannellini beans
  • 1¼ cup vegetable broth
  • 1 tablespoon arrowroot starch
  • 2 cups baby greens
  • ¼ cup vegan cream cheese
  • Juice of 1 small lemon
  • Fresh basil for garnish

Instructions

  1. In a medium saucepan over medium heat, sauté sliced onion in avocado oil until translucent (about 3 minutes). Add halved cherry tomatoes and cook for an additional 5 minutes.
  2. Stir in minced garlic, sun-dried tomatoes, and tomato paste; cook for another minute until fragrant.
  3. In a small bowl, mix arrowroot starch with a splash of vegetable broth until smooth. Add this mixture to the saucepan along with the remaining broth and rinsed cannellini beans.
  4. Bring to a simmer and cook for about 5 minutes to thicken.
  5. Stir in vegan cream cheese until melted; add baby greens and wilt for about one minute. Squeeze in lemon juice, season with salt and pepper to taste.
  6. Serve topped with fresh basil.
