Ingredients

Scale
  • 1.5 lbs chicken thighs or breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil or butter
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 3 cups cooked white or brown rice
  • Fresh parsley (for garnish)

Instructions

  1. Pat the chicken dry and season with salt, pepper, smoked paprika, and Italian seasoning.
  2. In a large skillet, heat olive oil over medium-high heat. Brown the chicken for about 4-5 minutes on each side until golden. Remove and set aside.
  3. In the same skillet, sauté diced onions for 3-4 minutes until soft. Add minced garlic and cook for another minute.
  4. Sprinkle flour over the onion mixture, stirring constantly for one minute to form a roux.
  5. Gradually add chicken broth while stirring to avoid lumps, then mix in heavy cream. Simmer for about 3-4 minutes until slightly thickened.
  6. Return the chicken to the skillet, spoon sauce over it, reduce heat to low, and simmer until cooked through (about 10-15 minutes).
  7. Serve warm over rice and garnish with fresh parsley.
