  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • Salt and black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a medium-sized ceramic baking dish.
  2. Slice Yukon gold potatoes as thinly as possible (about 1/16 inch).
  3. In a pot over medium heat, melt butter and sauté garlic until fragrant. Stir in flour and cook for 1-2 minutes.
  4. Gradually whisk in the heavy cream until thickened; add Parmesan cheese, thyme, salt, and pepper.
  5. Combine sliced potatoes with the sauce in a large bowl until coated.
  6. Arrange potato slices upright in the baking dish, pour any leftover sauce on top, and sprinkle extra Parmesan if desired.
  7. Cover with foil and bake for 30 minutes; remove foil and bake an additional 30 minutes until golden brown.
  8. Let cool for 10 minutes before serving.
