- 12 oz chicken or turkey sausage
- 1 tablespoon olive oil
- 1 large sweet potato (peeled and cubed)
- 5 cloves garlic (minced)
- 8 oz three-cheese tortellini
- 4 oz fresh spinach
- 1/2 cup heavy cream
- 6 cups water
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- Heat olive oil in a large pot over medium heat and add crumbled sausage; cook until browned.
- Add Italian seasoning, paprika, cubed sweet potato, minced garlic, red pepper flakes, and tomato paste; stir well.
- Pour in 6 cups of water and bring to a boil. Reduce to a simmer and cover for about 15 minutes until sweet potatoes are tender.
- Stir in tortellini and cover; cook according to package instructions (about 10 minutes).
- Add fresh spinach until wilted and remove from heat.
- Stir in heavy cream before serving.
