  • 1 lb ground turkey or chicken sausage (mild or spicy)
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream or coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Brown the sausage, breaking it up as it cooks. Drain excess fat and set aside.
  2. In the same pot, sauté garlic and carrots for about 3 minutes until softened.
  3. Pour in the broth and bring to a simmer.
  4. Add the gnocchi; cook until they float to the top (about 2-3 minutes).
  5. Stir in spinach and heavy cream, allowing the spinach to wilt.
  6. Return the sausage to the pot, add thyme, salt, and pepper; simmer for an additional 5 minutes.
