  • 34 lbs. ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or plant-based alternative)
  • 2 cups organic vegetable stock
  • 4 Tbsps tomato paste
  • 1 tsp sea salt
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Spread tomatoes and whole garlic bulbs on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 30 minutes until caramelized.
  2. In a pot, sauté chopped onions over medium heat until translucent.
  3. Add roasted tomatoes and garlic to the pot along with vegetable stock and tomato paste. Simmer together before blending until smooth.
  4. Stir in heavy cream (or vegan alternative) along with seasonings. Adjust flavors as desired.
