  • 1 lb steak (sirloin, flank, or ribeye)
  • 8 oz medium shell pasta
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1.5 teaspoons smoked paprika
  • 1 cup heavy cream (or half-and-half)
  • 0.5 cup beef broth
  • 0.5 cup grated Parmesan cheese
  • Salt and black pepper (to taste)
  • Fresh herbs for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente (8–10 minutes). Reserve some pasta water before draining.
  2. In a skillet over medium-high heat, heat olive oil and sear steak slices for 2–3 minutes per side until browned. Remove from skillet.
  3. Lower heat to medium; add butter, onion, and garlic to the same skillet. Sauté until softened.
  4. Stir in smoked paprika for about 30 seconds.
  5. Deglaze the pan with beef broth, scraping up browned bits; then add heavy cream and Parmesan cheese until smooth.
  6. Add cooked pasta and seared steak back to the skillet, tossing to combine. Use reserved pasta water if needed to adjust sauce consistency.
  7. Season with salt and pepper to taste, serve hot garnished with fresh herbs if desired.
