  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley (for garnish)

Instructions

  1. Prep the Potatoes: Poke each potato with a fork and microwave for 8 minutes.
  2. Preheat Your Oven: Set to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Coat the Potatoes: In a bowl, toss the microwaved potatoes with olive oil, salt, and pepper until evenly coated.
  4. Smash Time: Transfer to the baking sheet and gently smash each potato to about 3/8" thick.
