  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup liquid-state coconut oil
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt (optional and to taste)
  • 4 ounces softened brick-style cream cheese
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, mix the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until well combined.
  3. Gently fold in flour, baking powder, baking soda, and a pinch of salt.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, whisk together cream cheese filling ingredients until smooth. Pour over the batter in the pan.
  6. Spoon remaining batter on top of the cream cheese layer and smooth out gently.
  7. Bake for about 48 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool in pan for 15 minutes before transferring to a wire rack to cool completely.
