Ingredients

Scale
  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and prick sweet potatoes with a fork, then bake directly on the oven rack for about 45 minutes until tender.
  2. Once cooled, cut each potato in half lengthwise and scoop out the flesh into a bowl, leaving enough to maintain their shape.
  3. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the bowl. Mix well to combine.
  4. Spoon the filling back into the potato halves and place them on a baking sheet. Bake at 350°F (175°C) for an additional 20 minutes until heated through.
