  • 4 beef cube steaks (½ pound each)
  • 2¼ cups all-purpose flour (divided)
  • 1½ cups buttermilk
  • 1 tablespoon hot pepper sauce
  • 3 cups vegetable shortening (for frying)
  • 4 cups whole milk (for gravy)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon black pepper
  • ¾ teaspoon salt
  • 2 cloves garlic (minced)
  • kosher salt and black pepper (to taste, for gravy)

Instructions

  1. Pound each cube steak to about ¼ inch thickness for even cooking.
  2. In a bowl, mix 2 cups of flour with baking powder, baking soda, black pepper, and salt.
  3. In another bowl, whisk together buttermilk, hot pepper sauce, egg, and minced garlic until smooth.
  4. Dredge each steak first in the flour mixture, then in the buttermilk batter, and back into the flour for a final coating.
  5. Heat vegetable shortening in a skillet over medium-high heat to about 350°F.
  6. Fry steaks in batches for approximately three minutes per side until golden brown.
  7. Drain on a wire rack while you prepare the gravy by whisking remaining flour into pan drippings and gradually adding whole milk until thickened.
