  • 4 Garlic Cloves (minced)
  • 1 Red Chili (minced)
  • (2) 14-ounce cans Coconut Milk
  • 2 to 3 Tablespoons Soy Sauce
  • 3 Tablespoons Red Curry Paste
  • 1 Tablespoon Brown Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 1/2 lbs. Chicken Breast (sliced)
  • Cilantro (for garnish)
  • Chili Oil or Chili Crunch (for garnish)
  • Scallions (for garnish)
  • Fresh Lime (for garnish)
  • Steamed Rice (to serve)

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Add diced onion and sauté for 4-5 minutes until softened.
  2. Stir in minced garlic, ginger, and red chili; cook for an additional 2 minutes.
  3. Pour in coconut milk, soy sauce, brown sugar, salt, pepper, and red curry paste. Mix well.
  4. Add sliced chicken breast to the skillet and reduce heat to medium-low. Simmer for 15-20 minutes until chicken is cooked through.
